Fall Fever: Fun Thanksgiving Food

Your Thanksgiving / Friendsgiving feast is an incredible time of fellowship over delectable grub! It's a time to give thanks for the food before us, the friends and family beside us and the love between us. Here are a few unique recipes that you can add to your menu this year!


Honey Glazed Carrots - During the holidays, everything you make deserves a little dressing up -- including humble but hearty root vegetables.

Ingredients:

1 tablespoon vegetable oil, such as safflower
2 pounds carrots, cut into 1-inch lengths, halved if thick
1 cup canned reduced-sodium chicken broth or water
1/2 cup honey and 1 cup walnuts
2 tablespoons red-wine vinegar
Coarse salt and ground pepper
2 tablespoons unsalted butter

Instructions: In a large skillet, heat oil over medium-high. Add carrots; cook, stirring once, until beginning to brown, 2 minutes. Add broth, honey, and vinegar; season with salt and pepper. Bring to a boil; reduce to a simmer, cover, and cook until crisp-tender, 10 minutes. Uncover, and cook over medium-high until carrots are tender and liquid is syrupy, 7 to 9 minutes more (there should be only a small amount of liquid remaining). Remove skillet from heat; add butter, and swirl skillet until melted. Season with salt and pepper. Top by sprinkling some walnuts for added crunch and flavor!

Chicken Pot Pie Cupcakes - Add a twist to this American fave and bring a smile to everyone's face at your dinner table this holiday season! Mmm comfort food in a cute little presentation.

Ingredients:

1 chicken breast, poached and diced
1 (14.5 oz) can cream of chicken soup
1 cup Green Giant™ Valley Fresh Steamers™ frozen mixed vegetables
1 cup shredded cheddar cheese
1 tablespoon Herbs De Provence
1 teaspoon onion powder
1 teaspoon garlic salt
2 (10 oz) cans Pillsbury refrigerated biscuits

Instructions:

Preheat your oven to 400ºF. In a large bowl, combine the cooked chicken, cream of chicken soup, frozen veggies, cheese, herbs and spices. Lightly grease a 12-cup muffin tin and place the Pillsbury biscuits into each cup, pressing into the bottom and up the sides. Evenly spoon the pot pie mixture into each biscuit cup. Slide into the oven and bake for about 15 minutes. Check at the 12 minute mark. Let rest for about 3 minutes and dig in!

Bacon Wrapped Tater Tot Bombs - You're going to want to triple this recipe!

Ingredients:

2 cups frozen tater tots, at room temperature
1 ounce sharp cheddar cheese, cut into 1/4-inch squares
4 slices bacon, quartered
1/4 cup Brown Sugar
1 tablespoon chopped fresh parsley leaves


Instructions:

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside. Working one at a time, wrap each tater tot and cheese square in a piece of bacon. Repeat with remaining tater tots, cheese squares and bacon pieces. Dredge each tater tot in the brown sugar, pressing to coat. Place tater tots seam side down onto the prepared baking sheet. Place into oven and bake for 20-25 minutes, using metal tongs to turn at halftime.
Serve immediately, garnished with parsley, if desired.
